-Good ventilation is necessary to prevent problems such as health hazards, bad smells and unsanitary kitchens
Health hazards
-In a kitchen it is very hot (due to fire )
-Good ventilation will prevent heat from building up
-This will ensure the chefs are less stressed/decrease risk of dehydration and heat stroke
-Hence productivity goes up!
Moisture Build-Up
-Ventilation system must have a way for steam to exit
-If not steam condense onto equipment and grow mold
Bad Smells
-Overpowering smells from baked goods or spices can stick to kitchen surfaces
-A good ventilation system can reduce this
- Thus bad smells do not stick to the chefs or to the food!
